Millac Gold Single Cream and Real Dairy Whipping Cream were the first cream alternatives to be awarded the Craft Guild of Chefs Product Endorsement.

All were tried and tested extensively against the Guild’s strict criteria and achieved ‘an extremely high grading’.

Products from Lamb Weston’s range of Sweet Potato Fries have achieved an above average rating under the Craft Guild of Chefs Product Endorsement Scheme, enabling use of the esteemed ‘Approved Product’ logo.

Lamb Weston’s Sweet Potato Fries and Sweet Potato Shoestring Fries join the Company’s Connoisseur range, already in Lamb Weston’s Product Endorsement camp.

During the assessment, all three chefs agreed that with regards to sweet potato products, quality is the most important factor as it is easier for operators to charge a premium for them over regular fries, that having different shapes and cut sizes can help to drive additional sales and margin, and that they see sweet potato products as an alternative, upsell to regular fries, as they are on trend.

Lucky Boat’s noodle range achieves ‘Approved Product’ status

Lucky Boat has announced their noodle range, which is made to an authentic Chinese recipe, has been awarded the ‘Approved Product’ accolade by the Craft Guild of Chefs.

A panel of industry chefs put the products through a series of rigorous performance tests to determine their suitability, quality and excellence.

Steve Munkley, executive chef at The Royal Garden Hotel and vice president of the Craft Guild of Chefs, said: “We use noodles a lot in our Chinese restaurant, Min Jiang, and quality for us is the most important factor.

“I found the noodles from Lucky Boat to have a good flavour and elasticity, and an excellent texture; in particular, the No. 1 Thick noodles took on the flavour of the dish well and I’d consider using them in our operation.”

The panel of industry chefs unanimously agreed the noodles offered “a generous nest size” and that they performed “brilliantly” exhibiting “a good texture and mouthfeel, great noodle separation.”

Andrew Green, chief executive of the Craft Guild of Chefs, added: “We use noodles across a variety of dishes and look for quality as the most important factor when selecting the right noodle for each dish.

“I found the Lucky Boat noodles to be very good, in fact better than my current brand – especially the Wholewheat noodles, which exceeded expectations, and I’d have no hesitation in changing to Lucky Boat.”

The panel of chefs agreed wholewheat noodles was an ‘interesting concept’ and they also suggested the noodles could have a place as an alternative to regular pasta product.

The Lucky Boat noodles are simple to prepare and are suitable for vegans or vegetarians. The noodles are manufactured by Westmill Foods to a high standard, undergoing daily product testing.

Demi glace, marinades, stocks – both pastes and powders

Demi glace was a good product, in particular when used with roast onion stock.

Marinades were considered good and the chefs who tested these products would use them. In the stock pastes, testers rated the highest for overall flavour and consistency: roast chicken, roast beef and roast onion.

Others were rated highly too. In powders, lamb was rated highest.

The programme, exclusively available to business partners, involves a panel of working Craft Guild chefs who assess the product including completing a ‘fit for purpose’ analysis questionnaire.

The market sector of the panel can be specified, but not the individual: cost sector, profit sector, or both, and can be tailored to pub, restaurant, banqueting, contract, ethnic and education sectors.

Once the products have achieved a pass rate, companies can use a specific Craft Guild logo and the wording ‘approved product’ on any packaging and literature for the tested product.
