Ugly Butterfly to host discussion on ‘Game- it’s role in food sustainability’

Ugly Butterfly, Adam Handling’s zero waste restaurant in Chelsea, is hosting a free panel discussion with game experts to examine the role wild game can play in encouraging people to eat in a more sustainable way.

The event will take place at 6.30 pm on 18 March, with just 20 tickets available. 

The panel includes:

  • Jose Souto, game chef and senior chef lecturer at Westminster Kingsway College. 
  • Mike Robinson, restaurateur and operator of the Owl Barn game larder. 
  • Tristan Kirk and Simon Wilkinson, directors of Boston-based Lincolnshire Game- the UK’s largest game processor. 

Game meat is versatile and simple to cook so it is becoming more popular in the UK market. At Westminster Kingsway College 3,500 chefs have been educated over the years about the uses of game meat and its provenance. 

Those who wish to join the event must pre-book by emailing [email protected]. Attendees will be able to keep their table and eat from the Ugly Butterfly menu following the discussion. 

The Felix Project collects surplus food from the restaurant and delivers it to local charities and primary schools to help feed vulnerable people.
