Rational helps sustain culinary excellence at the Alain Roux Culinary School

Rational’s latest customer story showcases the Alain Roux Culinary School at the Waterside Inn, famed for its three Michelin stars and its distinction as the first restaurant outside of France to maintain all three stars for 25 consecutive years.

The Roux family is undoubtedly one of the most influential forces in the catering industry. Their legacy, spanning five decades, has left an indelible mark on kitchens across the globe. The school is renowned for its exceptional training in French cuisine and features six professional workstations as well as the Michel Roux Snr Library. It is equipped with an iCombi Pro 6-1/1, used for preparing dishes like their signature raspberry soufflé, and an iVario Pro 2-XS, which is used for making stocks, sauces, and homemade strawberry jam that is both sold and used in the hotel’s rooms.

The Rational iCombi Pro combi steamer plays a pivotal role in the school’s culinary training, offering precise temperature control, versatility, efficiency, ease of use, and reliability. This enables the Waterside Inn Culinary School to equip students with the essential skills and knowledge to succeed in the culinary industry.

Alain Roux said: "It’s beautiful when you look at it, a large clear window. As a chef, you like to see the cooking stages and how things are evolving. On top of that, the regularity on all your shelves from the top to the bottom, it’s the same consistency. Maintaining the stars must be a question of innovating new dishes as well as consistency in what we do. So that’s why we need very good equipment for that.

“My father was one of those chefs who was always at the top of his game with his equipment. He was always ready to learn and discover what was the best on the market, and he was one of the first to use Rational in his kitchen.
