Emily Roux opens first restaurant with husband
While Roux – daughter of Michel Roux Jr – manages front of house, Italian born Ferrari – former head chef at Le Gavroche - will lead the kitchen.
Drawing on their classical French training and love for Italian food, Roux and Ferarri devised the menu together, with the latter commenting: “Our menu will of course change seasonally but for the first one, one of the dishes we love most is celeriac “cacio e pepe” with extra-aged balsamic vinegar.”
Inspired by its name, Caractère – meaning ‘character’ in English – the menu is divided into six character traits, with three dishes available in each:
Curious – small plates/starters (seared mackerel, confit beetroot, black cardamom and parsley condiment)
Subtle – vegetable-focussed small plates/starters (‘“Acquarello” risotto, almond praline, reduced port and black crumble)
Delicate – fish (main course)
Robust – meat (main course) (seared ox tail ravioli, beef consommé, cone marrow and fresh herbs)
Strong – cheese
Greedy – dessert (whole roasted figs in the leaf, gateau basque, extra thick double cream)
Roux said: ““Two head chefs in a kitchen can be one too many. Even at home, one of us cooks at a time.
“I’m thrilled to be working front of house - great service is just as important as great food to me. I love to talk and get feedback directly from our guests. You don’t get to do much of that in the kitchen.”
Ferrari added: “We came up with the menu together. The food belongs to both of us, the entire concept of the restaurant belongs to both of us, and we can be much more in control of the entire experience for our guests if we share these roles between us.”
Having officially opened last week (4 October), the restaurant is open for lunch and dinner Tuesday – Saturday.
