Ross Marshall from The Road Hole Restaurant at the Old Course Hotel, David Goold from Café St Honore in Edinburgh and Scott Spink of Craigie's Farm Deli and Café in South Queensferry will each go ahead to compete for the Young Chef of the Year title at the Scotland Food and Drink Excellence Awards on 26 May.
The three chefs took part in a cook-off in Michelin-starred chef Martin Wishart's Cook School in Edinburgh where they created a main course from a selection of Scottish ingredients only revealed to them on the day. They also took part in a short interview with Wishart and fellow judges Paul McLaughlin, chief executive of Scotland Food & Drink and Richard Bath, editor of Scottish Field. The winner will be announced at the Scotland Food & Drink Excellence Awards at Dunblane Hydro on 26 May. Wishart said: "The level of knowledge and skill was extremely impressive from all three chefs and it's certainly going to be a tough decision to decide an overall winner. Scotland is a hot bed of culinary talent and it's so encouraging for an established chef like me to see new faces coming forward to champion Scottish ingredients and bolster the reputation of this country's already fantastic food and drink industry."
