Borough Market-based restaurant Roast has appointed a new head cook to lead the kitchen brigade.
Marcus Verberne has previously worked at top establishments including Le Caprice, J Sheekey, The Ivy and Hix at The Albemarle. In 2008, he joined Brown's Hotel as head chef, and was promoted to the position of executive chef in August 2010. Originally from New Zealand, Verberne began his career in Wellington before moving to Melbourne, Australia to work alongside Bill Marchetti at Marchetti's Latin and then Cecconi's. In 2001 he relocated to London to take up his position with Caprice Holdings. A number of Verberne's new dishes for Roast will be available immediately, with the entire menu unveiled in March.
