Red Tractor Pork competition winners revealed
Ben Keggins, development chef at the Orchid pub group and Peter Manner, head chef at The Lygon Arms Hotel, are among the winners of the Red Tractor Pork competition.
Devised to raise awareness of Red Tractor Week (14-20 June) and encourage chefs to put Quality Assured pork dishes on the menu, chefs simply had to submit a recipe featuring pork and other Red Tractor ingredients.
Keggins devised a slow roasted pork belly served on black pudding & parsley red rooster mash served with a bramley apple cream jus and Manner served up a slow cooked cider belly, thyme & apple sausage and tender loin croute.
Other winners were Chris Moore-Harper, head chef at contract caterers Charlton House and Santiago Vaca, sous chef at contract caterers' Elior.
All of the winning chefs received a £50 'Red Tractor Goody Box' containing a joint of Red Tractor pork along with Red Tractor potatoes, vegetables, strawberries, cream and beer.
The recipes have been professionally styled and photographed for use in a BPEX Foodservice Red Tractor awareness recipe leaflet which will be published in the autumn. The dishes will also feature on www.redtractor.org.uk and www.porkforcaterers.com. Additionally, the four dishes will be served by the chefs at their outlets with Orchid Group, Elior and Charlton House (all of which are Red Tractor licensees with more than 1,000 units) looking at incorporating their dishes on to other unit's menus. Tony Goodger said: "We had a great response to this competition and it just goes to show that there are many chefs using quality Red Tractor ingredients. The four chefs whose recipes were chosen as the winners should be very proud of what they have achieved and we wish them many congratulations.
