Pub chefs to get expert help 'on tap' from Nestlé Professional's Maggi guest chef

Brendan Corder, senior development chef at the Orchid Group has been announced as the pubs expert for Nestlé Professional's new Maggi Guest Chef campaign.
With 300 pubs to look after in his role, keeping ahead of the latest trends and finding time to come up with innovative and creative menu concepts and dishes for all occasions, means Corder understands all about the challenges facing publicans and chefs. He explained: "There is nothing more rewarding or exciting than seeing a dish you have developed being put into print on a menu, or better yet, seeing a customer enjoy your dish. That's what is so great about this sector – you can literally see your successes. But that doesn't mean it is always easy and that's why I wanted to get involved with the Maggi Guest Chef campaign. We need as an industry to find ways to share information and knowledge and support each other." Corder has developed a range of recipes that will impress pub customers including blossom honey and orange roasted fish using Maggi instant gravy and oriental barbecued chicken, plus dishes that are perfect for special occasions such as Christmas, Easter and Mother's Day. Nikki Adamo, head of category marketing at Nestlé Professional, said: "This campaign means that by providing a direct line from Brendan to the industry, pub chefs get really valuable first hand advice, which isn't always readily available. Pub chefs work really hard and often long hours, so we are trying to find ways to make life easier, sharing best practice and opening up communications to support this passionate group of creative individuals." Corder's recipes will be released seasonally on www.maggi.co.uk along with a podcast of his recipes, hints and tips from June 1 2011. Recently it appointed chef Tom Kerridge of the Michelin starred Hand and Flowers pub in Marlow to be its CHEF brand ambassador.
