Koffmann's 'pop-up' restaurant at Selfridges to be extended

Legendary French chef Pierre Koffmann will be staying at Selfridges a little while longer after his pop–up restaurant, 'Pierre Koffmann Restaurant on the Roof at Selfridges', has been extended.
Koffmann will be at the famous department store until October 31st where diners can see him and his team cook. The on-the-roof restaurant is part of the London Restaurant Festival, which runs from 8th to 13th October 2009. Around 600 restaurants have now signed up for the festival as founder, Fay Maschler explained: "While it's not a surprise that Londoners have been clamouring to get their hands on tickets to Pierre's restaurant, it is thrilling. With tickets being snapped up for all of the other events, there's a real sense that the London Restaurant Festival is capturing the city's imagination. When we conceived the idea for the festival we felt it was long overdue, but for it to maintain the interest of the capital on the eve of London Fashion Week, is simply wonderful." Koffmann will be joined in the 80-cover restaurant by members of his original culinary brigade, including Tom Kitchin, Eric Chavot, Tom Aikens, Raphael Duntoye, Helena Puolakka and William Curley, now all highly-reputed head chefs in their own right. Selfridges Food and Restaurants director Ewan Venters says: "After much negotiation and persuasion we were able to convince Pierre that he ought to extend his stay at Selfridges for one last time so as many people as possible can indulge in Pierre's cooking. While we always anticipated Pierre Koffmann was popular we underestimated the relevance Koffmann has had on a whole generation of foodies." Venters added that top chefs such as Angela Harnett, Chris Galvin and Marco Pierre White have booked places at the pop-up restaurant. Koffmann said that his stint at Selfridges has reignited his passion for cooking: "I am happy to stay longer at Selfridges and I am thrilled people still remember me! By extending my time I am thrilled to have more opportunity to experiment with new dishes and introduce a daily special, which will sit alongside some of my more classic dishes.
