International Salon Culinaire announces winners of seafood challenge

International Salon Culinaire, the historic chef competition hosted at the Hotel, Restaurant & Catering Show, has unveiled the third set of winners in its series of virtual chef challenges taking place in 2021.

The Major Seafood Challenge, in partnership with Compass Group UK & Ireland, saw chefs create and cook a seafood main dish incorporating at least one of the premium stock bases supplied by sponsor Major International.

The entrants were required to submit a recipe, a brief description and a photo of the dish, plus a short video showing their creation and detailing their reasons for entering it into the competition. The seafood challenge judges included Henri Brosi, Ian Nottage and Kevin Clark.

Salon Director Steve Munkley, commented: “A year ago we wouldn’t have thought Salon Culinaire judging would have gone online, but it’s been extremely successful. We had over 34 entries for the Seafood competition and some really excellent dishes.”

The Gold winners included Grzegorz Niewiadomski of Compass Group Ireland, with a mackerel, barley miso, oyster, cucumber and sea buckthorn dish, and Cpl Ralph King from The Army with his dish ‘A Day at the Seaside’.
