
Ex Restaurant Story chef opens own restaurant
Located on Bermondsey Street, the brand new restaurant opens next week (30 October) and will specialise in ‘Japanese food with a European accent.’ Bringing together traditional flavours and Sato’s Michelin-starred technique, customers can chose from signature chirashi rice bowls or to customise their own to go.
Signature dishes include: Yuzu Salmon (yuzu-spiked salmon with sushi rice, avocado, cured cucumber, sushi ginger, goma wakame, pickles and crispy shallots) and the ‘humble chicken’ (den dashi chicken on five grain sushi rice, umami mushrooms, shichimi mayonnaise, spicy beansprouts, pickles and crispy shallots).
Founder Sato – who has worked in kitchens including Trinity (London), RyuGin (Tokyo) and Eleven Madison Park (New York) - said: “Born and raised in Japan, shokuji (Japanese meal of rice, pickles and soup) is what I grew up on, and can be found everywhere in Tokyo from breakfast tables to three Michelin starred restaurants.
“It’s a humble trio and for me represents my heritage and memories of my childhood.
“I want to make this style of food accessible to everyone and hope that my memories of growing up in Japan will translate to the flavours and textures on Omoide’s menu.”
Omoide’s opens on Bermondsey Street next Friday, 30 October.
