Ellenborough Park hotel's executive head chef cooks for The Queen

Written by: Admin
David Kelman, executive head chef at Ellenborough Park, Cheltenham's hotel and spa, prepared a three-course lunch for the Queen earlier this week (7 June).
The Queen visited Wales to open the 4th Welsh Assembly. Kelman, who is a member of the Welsh National Culinary Team, prepared the Royal Luncheon at Cardiff's Millennium Centre. The Royal Luncheon menu featured: a starter of smoked salmon ravioli, salmon rillet and cucumber consommé; a herb crusted loin of lamb, cottage pie and summer greens main; with a gooseberry fool, gooseberry charlotte and wild fig and gooseberry ice cream to finish. This is not the first time Kelman has cooked for the Queen. In 2007, he was part of the team at the opening of the Welsh Assembly, and a year later he cooked for Prince Charles' 50th Anniversary of being coronated as the Prince of Wales. Kelman has been a member of the Welsh National Culinary Team since 1999. Christophe Dumeige, operations manager at Ellenborough Park, said: "We are extremely proud that David has the opportunity to prepare food for the Queen again. We know he is delighted to honour his Welsh-roots and represent Ellenborough Park at this prestigious occasion."
