Chefs in Schools releases Feed Your Family cookbook
Feed Your Family is Nicole’s third cookbook and serves up a whirlwind tour of the fresh and vibrant food being served in schools - from kale crumble, ‘naked’ fish, street food, fragrant curries, plus puddings packed with veg. The book has a dual purpose - it’s raising money for the charity Chefs in Schools - which Nicole co-founded after leaving a role as head chef at NOPI, to move into school food.
Chefs in Schools is backed by the great and good of the culinary world and helps school kitchen teams serve up exciting and interesting nutritious, veg-heavy dishes to kids, all made from scratch, cooking to a restaurant brigade system.
The book passes on lessons learned from years of feeding kids, who can be the most honest of customers. It also contains beautiful food photography from Issy Croker. Plus recipes from the charity’s supporters - including Yotam Ottolenghi, Anna Jones, Thomasina Miers and Henry Dimbleby, featuring alongside recipes created by school chefs from around the world.
Nicole Pisani, co-founder of Chefs in Schools and co-author of the book, said: “So many people have worked with us over the years to show what is possible in school food, we are delighted to share these recipes with a wider audience.
“Food has always been very important in my life, through the charity I hope to pass on my love for food, interesting ingredients and to spark curiosity in future generations. This book is a celebration of the many talented school kitchen teams and chefs - some who’ve made the jump from restaurants to school food - who are serving up meals that would hold their own in any restaurant.”
The charity targets its support in areas where pupils rely on free school meals and in schools struggling to meet the school food standards. They teach school kitchen teams to serve up clean, healthy, inexpensive, generation-powering, mind-opening, society-changing food.
Joanna Weinberg, co-author and Chefs in Schools patron, added: “It costs us around 15.00 to start transforming the food for every pupil – every sale of the book will help this vital work. But we also hope it helps create happy memories built around food.”
