Brighton's catering students work with Fatboy Slim's chef

City College Brighton and Hove Catering students working at the East Central Brasserie training restaurant at the American Express Community Stadium in Brighton recently got some valuable hands-on experience alongside Fatboy Slim’s Chef Dan Stockland before and during the DJs two shows at the stadium.
Alongside their daily responsibilities of catering for up to 50 customers in the brasserie, the students helped with the catering for Fatboy's technical crew. Classically trained chef Dan, who has also toured with some of the world's top artists and bands, including Eminem, Kanye West, Coldplay and Robbie Williams, said: "Having been a catering student myself, I remember what a tough learning curve it can be so it was great to be able to give these students an insight into the type of work involved in crew catering. I was really impressed by their work ethic and how resourceful and keen they were." Dan also gave the four students who impressed him the most the opportunity to work alongside his team in the backstage and VIP area during the shows. Tutor Jonathan File said: "To see the work-rate required for this sort of back-of-house crew catering has been a real eye-opener for the students but they definitely rose to the challenge and Dan has been a fantastic role-model not just in terms of showing them the kind of career they can aspire to but also by being so personable and professional no matter how stressful the work gets."
