Young chef Mark Moriarty, representing the UK & Ireland, has been crowned as the S.Pellegrino Young Chef 2015, following a tense grand final event last month.

He came out on top, with his Celeriac baked in barley and fermented hay, cured and smoked celeriac, hazelnut, celeriac and toasted hay tea, standing out as the only vegetarian dish in the competition, with the support of mentor chef Clare Smyth, at his side as a guide and advisor.

On the stage with him, Peruvian Maria José Jordan representing Latin America, came runner up with her dessert, Immortal Technique, followed by Norwegian Christian André Pettersen, representing Scandinavia, with his East meets West dish heroing salmon.

The jury who crowned Moriarty, consisted of seven international chefs, known as the Seven Sages: Gastón Acurio, Yannick Alléno, Massimo Bottura, Margot Janse, Yoshihiro Narisawa, Joan Roca and Grant Achatz.

Moriarty said: “It has been an honour to take part in this competition, having been able to present my dish to the Jury – a truly stellar line up of the world’s greatest Chefs. I am absolutely thrilled to have won the title of S.Pellegrino Young Chef 2015 for UK & Ireland – we don’t win enough of these kind of awards!

"A huge thank my mentor chef, Clare Smyth, for the advice and support she has given me throughout this journey.”

UK & Ireland mentor chef, Clare Smyth, adds: “Mark is a phenomenal guy and an incredibly talented young chef. I was absolutely blown away by his skill, his confidence and his maturity. To win the very first S.Pellegrino Young Chef award is just brilliant and he has set the bar high.

"He truly embodies all of the qualities that S.Pellegrino were searching for through this competition and I am so incredibly proud of him.”
