NCOTY winner Orry Shand recalls ‘amazing feeling’ of winning competition

During an interview National Chef of the Year winner Orry Shand, executive chef at Entier Ltd, recalls the ‘amazing feeling’ of winning the prestigious competition.

Orry took the top spot with his delicious menu of Turbot from the North Sea with smoky Orkney scallop for starter, Lumina lamb with the Scottish autumn for main course and a celebration of Manjari Valrhona with influences from Asia for dessert. 

Speaking about winning, Orry said: “It was a moment which I had thought about a lot in the lead up to the competition so when it finally happened, it was quite hard to take in. I Was over the moon. To be added to the prestigious list of winners in such a well-respected competition is an amazing feeling and one I shall relish.”

Previous winners of the NCOTY competition include Gordon Ramsay (1992), Mark Sargeant (2002), Simon Hulstone (2008), Russell Bateman (2014) and Ben Murphy (2023).

Speaking about his future plans, Orry stated: “I am looking forward to all the trips and prizes that are planned for next year and will take all the opportunities I can and take it from there.”

Since winning the NCOTY competition, Orry says he has been busy working whilst also spending some quality time with his family. Orry added that he loves to cook with fish and shellfish due to the good quality of produce available in Scotland.

When asked about what advice he would give to people entering the competition, Orry explained: “I did a podcast with the Craft Guild of Chefs, and it has a lot of info on it, so give it a listen.

“But in a nutshell, practice and do timed run throughs. Think of problems and scenarios which you might run into, so you’re as rehearsed as possible. But the most important thing is that you use amazing produce and your food is super tasty.”
