London Hilton on Park Lane appoints new executive head chef

London Hilton on Park Lane has announced the appointment of Nicolas Smalberger as its new executive head chef.

With more than three decades of experience and a acclaimed career, he brings ‘unparalleled expertise’ and creativity to one of London’s most iconic hotels. In his role, he will oversee the entire culinary operations of the hotel, including venues such as Revery Bar and Park Corner Brasserie, as well as room service and event catering.

The hotel is renowned for hosting high-profile events, with its Grand Ballroom accommodating up to 1,250 guests. Under chef Nicolas’ leadership, the hotel’s event catering is poised to deliver ‘exceptional dining experiences’. 

Chef Nicolas’ career has taken him across five continents, where he has led kitchens in celebrated culinary destinations. From the vibrant flavours of South Africa to the dynamic food scenes of New York, India and China, his culinary style reflects a unique fusion of global influences.

His leadership has been showcased in roles such as executive chef at The Palace of the Lost City, The Table Bay Hotel and The Royal Livingstone in Zambia. Notably, he also oversaw international culinary teams during South Africa’s hosting of the 2010 FIFA World Cup. 

Commenting on his appointment, Nicholas said: “I aim to create an environment where my team feels valued and inspired, recognising that a happy and motivated team is essential to delivering exceptional culinary experiences. In his new role, chef Nicolas aims to reimagine classic dishes with a bold, modern flair infusing each menu with a global perspective. His innovative approach blends traditional flavours with contemporary techniques, promising to delight guests with every dish.
