Craft Guild of Chefs Culinary Team continues record-breaking run at BCC 2025

The Craft Guild of Chefs Culinary Team has added another impressive chapter to their 2025 competition season, following a standout performance at the British Culinary Championships (BCC).

With five awards in total — including two Best in Class Plates, one Gold, one Silver, and one Bronze — the team continues to dominate the UK culinary competition circuit with both style and precision.

Among the highlights at BCC was the Ian Wilson’s live open lamb main course, which showcased exceptional technical skill and deep respect for classical cookery.

The dish featured perfectly cooked lamb loin, served with smoked pomme purée, wild garlic jus, glazed baby vegetables, and a delicate lamb shoulder croquette. It was praised by judges for its balance, presentation, and refinement — securing one of the team’s two coveted Best in Class awards.

Also celebrated was the team’s plated chocolate dessert, a visually stunning and technically complex entry that earned the second Best in Class title. The dessert — a rich Valrhona chocolate crémeux with hazelnut praline, cocoa nib tuile, cherry gel, and milk chocolate mousse — impressed the judging panel with its layered textures and bold, clean flavours.

These results push the team’s 2025 season tally to 19 Best in Class awards from just 24 competition entries — a remarkable achievement by any measure.

Terry O’Riordan, team manager of the Craft Guild of Chefs Culinary Team, said: “The BCC is the culmination of 12 months of hard work and dedication by our entire team. These competitions aren’t just about cooking — they’re about teamwork, discipline, and representing the very best of British culinary talent.

“To see our chefs achieving this level of success consistently across multiple national platforms is not only rewarding, but a reflection of just how strong this current team is. In my opinion, this has been the best competition season that the Craft Guild Culinary Team has seen in recent memory.”

This latest success follows a strong run earlier in the year at ScotHot, where the team claimed additional top honours. With preparations already underway for Salon Culinaire and the World Cup in Luxembourg 2026, the momentum shows no signs of slowing.
