
Coup de pates names Chefs at Play competition winner
Lo, a student chef and protégée of Masterchef: The Professionals’ winner Gary MacLean, was named winner after defeating combined services chef Aaron Kenny, University College Birmingham’s Alice Prothero and sandwich bar owner Jennifer Brummitt at a live cook-off.
Finalists were required to create a recipe which combines patisserie with food on-the-go. Lo’s ‘Taste of Spring’ recipe features a Coup de pates tartlette case filled with honey blossom mousse, topped with elderflower and strawberry jelly and lemon curd, garnished with fresh strawberries, blueberries and pistachios.
She said: “I’m so excited, I can’t really take it in. It was such a close call, because everybody’s creations were so good, and so different with regards to flavours.
“I just wanted to make something that reflected British seasonality and bursts of spring colour - a celebration of the great outdoors.”
As part of her prize, the Coup de pates’ development chefs will recreate Lo’s recipe and she will showcase it at the restaurant festival Taste of London on June 16th alongside Chef James Tanner, chef ambassador for ARYZTA Food Solutions.
