Chef Francisco Migoya joins British Library food series to ‘defy' anti-bread movement’

Mexican chef and co-author of ‘Modernist Bread,’ Francisco Migoya, is attempting to “defy the anti-bread movement” this week (4 May), hosting two talks on bread and its health benefits as part of the British Library’s new food series.

After four years of “non-stop” research, photography, experiments, writing, and baking, Migoya – who studied French gastronomy at the Lycée d'Hotellerie et de Tourisme (Strasbourg) – is visiting London to share his expertise and experience at the British Library.

The British Library ‘Food Season’ runs until 2 June, with the line-up including:

  • Ingredients: Terroir in cheese and wine - Bronwen Percival, cheese buyer for Neal’s Yard Dairy

  • Philosophy of Coffee: A Talk and a Tasting, with Brian Williams – ‘blogger and author of ‘
  • The Wine Dine Dictionary: Victoria Moore (wine critic) and James Runcie (author and playwright)
