Top chef joins St James's Hotel to launch restaurant
Michelin starred chef William Drabble has been appointed as executive chef at St James's Hotel and Club to launch its newly named Seven Park Place restaurant next month.
He will be accompanied by former colleague, Christophe Thuilot of the Capital Hotel, who joins St James's Hotel and Club as food & beverage manager.
Drabble will launch the hotel's restaurant on 9th September and will oversee all aspects of the new dining concept at the hotel, including private dining, room service and the hotel's more informal dining space, William's Bar & Bistro, which is to officially launch in the new year. He will work closely with current head chef, Philipp Vogel, who will remain in his position at St James's.
As well as designing a new menu for Seven Park Place, Drabble will be working with the hotel team to develop a fresh new look for the fine dining restaurant. The establishment will close for one week in mid October for a minor refurbishment.
His dishes will be modern-French in style but will be made up of primarily British ingredients.
Drabble said: "I am thrilled to be joining St James's Hotel and Club. It's a beautiful hotel and I feel my menu concept will fit perfectly with the hotel's very 'British' style, prestigious London location and varied European clientele. "The launch of Seven Park Place is a fantastic new challenge for me after spending 10 years at Aubergine. I envisage an intimate dining experience which –without the Michelin starred prices– will be accessible for all. I can't wait to get stuck in!"
