Great Dishes of the World had a 'huge' impact after its publication in 1963, and went on to sell more than 10 million copies in numerous editions.

Jill Norman, a cookbook editor, said: “Carrier persuaded readers to look beyond their usual culinary boundaries and to experiment, inspired by his confident and exuberant style.”

Great Dishes of the World was voted as one of the most influential cookbooks by chefs and authors when asked by the 1,000 Cookbooks project.

Shaun Hill, a Michelin-starred chef who started his career in Carrier’s London restaurant, welcomed the news: “Robert Carrier is an underrated influence. His food was unashamedly luxurious, with plenty of cream, eggs, butter and wine.

“The menu included classic dishes from the era’s best French restaurants, and Middle Eastern and North African dishes like Moroccan Koftas.”

Ckbk allows people instant access to hundreds of the world’s best cookbooks. There are 350 cookbooks and more than 75,000 recipes available online. It features contemporary authors including David Tanis, Molly Yeh and Naomi Duguid.

Ckbk was able to make Carrier’s book available due to recent legislation that enables ‘orphan works’ out of legal limbo and back into the public sphere.
