The restaurant, with 23 covers, will offer a menu that will evolve and develop based on feedback, in preparation for Simmonds’ first permanent London restaurant.

The menu will focus on surprising flavour combinations, which includes Quail with asparagus, sunflower seeds and lardo, red mullet with green strawberries and green tomatoes, and a yeast parfait with lychee and puffed rice.

The pop up will also feature a wine list of 31 wines and a wine ledger, which offers a limited selection of fine and rare wines.
