Young Seafood Chef of the Year 2015 open for entries

Entries are now open for the Young Seafood Chef of the Year competition which will being in March 2015, with regional heats, before the grand final taking place in June 2015.

The annual competition, now in its sixteenth year, invites full-time and college-based modern apprentice chefs from across the UK to compete.

Competitors will be asked to create a menu consisting of a starter of salmon or haddock fillets, an intermediate of whole seabass or whole mackerel and a main of cod or Pollock.

A total food cost of £15 per person is allowed using market values at the time of entry. All other items needed, including garnishes, should be calculated within the £90 available. Each team will be allowed three hours to prepare and present their dishes and should produce six copies of their menu.

Winners will receive a Thermomix TM31 for their college, as well as £500 per team member, £1000 Russums Voucher for the College, a cookbook, competition trophy, medal and certificate. The winners will also showcase their skills at the World Seafood Congress in Grimsby next September.

Regional heats for the competition being on March 6th 2015 with the Northern Heat at Motherwell College, followed by the Western Heat at Coleg Llandrillo Cymru on March 13th, then the Eastern Heat held at City College Norwich on March 20th. The grand final will be held at the Grimsby Institute University Centre, Lincolnshire on June 12th 2015.

Entries, which must be returned to Paul Robinson of the Grimsby Institute, close on February 6th 2015.
