S.Pellegrino crowns Young Chef 2018 UK & Ireland winner

Written by: Katie Imms
Italian water brand S.Pellegrino crowned chef Killian Crowley the winner of its Young Chef 2018 UK & Ireland competition this week (20 November) - securing his place in the global finals round in Milan next year.

Having outshined the other ten contestants with his signature dish of turbot, kohlrabi and sea purslane, Crowley impressed the judges, including Angela Hartnett, Phil Howard, Alyn Williams, and Mickael Viljanen, by adhering to the five ‘Golden Rules’ – “ingredients, skill, genius, beauty and message.”

With experience in Michelin star restaurants across Europe and his current role as chef de partie at the one Michelin star, Aniar, Crowley said: “I’m very happy to represent Ireland and the UK (in the global final); I have spent a long time practising and sourcing all the produce.

“It’s not just me though, I have a great team behind me. So many people have been supporting me and I can’t believe that I have now actually won. I’m just over the moon.”

Mentor chef and judge, Angela Hartnett, added: “The calibre of dishes we tasted tonight was very impressive. Killian’s dish was a superb piece of cooking, it really ticked all the boxes – delicious food, perfectly executed with simplicity at the heart. The winning dish was a no brainer, all four judges put it as their number one dish – it really shone tonight.”

The winner of each local competition, which continue until December, will automatically qualify for the S.Pellegrino global finals round in Milan, June 2018, where the 21 finalists will work with their mentor chef to improve their signature dishes, and be in with the chance of winning.
