DoubleTree by Hilton Liverpool has announced that it is opening a restaurant with chef and TV personality Simon Rimmer.

The restaurant will be named Simon Rimmer at Layla Brasserie and is the first venture from the chef to open his hometown of Liverpool.

Located within the new hotel, which is housed in a Grade II listed building on Dale Street, the restaurant partnership sees Rimmer involved at every level of Layla Brasserie, including the development of the concept, the team selection, creation of the menu and the values of the restaurant.

David Hughes, general manager of DoubleTree by Hilton Liverpool, commented on the restaurant which is set to open later this year: “This is a hotel that Liverpool deserves and we therefore wanted to give the city one of the country’s finest chefs to head up its most prestigious destination restaurant, venue and hotel.”

Rimmer added: “We are in the process of hand-picking the most talented and creative chefs in the hospitality industry who will join the team in Liverpool. Thanks to their expertise, my vision for creating something really special and my ambition to be the best independent neighbourhood restaurant in Liverpool is being realised.”

Simon Rimmer will join a busy roster of celebrity chefs at DoubleTree by Hilton’s UK hotels. The current portfolio includes The Kailyard by Nick Nairn at DoubleTree by Hilton Dunblane Hydro hotel; and The Marco Pierre White Steakhouse at DoubleTree by Hilton Chester and DoubleTree by Hilton Bristol South.
