Sustainably sourced, fresh and seasonal produce will feature on the restaurant's menus. The wine list will feature mostly Italian, rare, fines and gems and a few labels from France and the New World. Sylvain Ercoli, general manager, commented: "I'm delighted to welcome Robbie to our team; he brings a wealth of experience and creativity gained through years of working with great chefs. His Italian/British nationality makes him the perfect match for Il Ristorante at The Bulgari Hotel in London."
