Guernsey chefs take the lead in the Channel Islands Chef of the Year 2013

The Auberge Restaurant in Guernsey produced two winners at the annual Craft Guild of Chefs Channel Islands Chef of the Year competition held at the Guernsey College of Further Education.

Daniel Green from The Auberge shared first prize jointly with Ashraf Elsergany from the Saints Bay Hotel in Guernsey in the senior competition, while Calum Humphries from The Auberge came first in the junior category.

Chefs had come from all areas of the Channel Islands to compete in the senior, junior, student and pastry competitions. In the junior and senior chef categories, entrants had to produce a creative lunch menu for four people in two hours that had to showcase locally sourced sea bass in the starter and locally sourced beef in the main. Seniors also had to produce a dessert showcasing Guernsey dairy produce.

Twenty-two year old Humphries, for example, created a menu featuring a duo of sea bass and fillet of Guernsey beef served with Fort Grey blue cheese.

Competition organisers and examiners – Steve Bacon from the Guernsey College of Further Education and Stephen Scuffell, Craft Guild vice president and executive chef at the Crown Moran Hotel in Cricklewood in London – were very impressed with the quality of all the entrants.

"What has been particularly fantastic this year is the standard of entries," said Bacon. "It has got better year on year since we launched it five years ago but the leap was really noticeable for 2013."

Scuffell, who has made his mark in national and global culinary contests, added: "It's worth emphasising that we apply the highest standards to this Channel Islands competition. In some cases it is the reason for not awarding gold, but even achieving a bronze or silver is something to be proud of at this level."

The top finalists of each competition received a complimentary place at the Taste Guernsey annual dinner at the Duke of Richmond Hotel on April 22, as well as trophies, certificates and chefs jackets.
