EBLEX offers meat purchasing guides free of charge to foodservice customers

EBLEX is offering catering butchers, who are members of the Quality Standard scheme, the opportunity to give their foodservice customers free printed copies of the Meat Purchasing Guide when they sign up to become a new scheme member.
The Fourth Edition Meat Purchasing Guide contains over 320 beef, lamb and mutton cuts, and is designed to help chefs and suppliers work together to the same specification when used in conjunction with the Cutting Specification Manual. Laura Bishop, EBLEX marketing manager (quality schemes), explained: "The Meat Purchasing Guide is an invaluable tool for chefs and helps them to communicate effectively with their supplier when ordering cuts of beef, lamb and mutton. "It holds over 320 different cuts, each with its own unique identifying code. When one of the codes is given to a supplier, the supplier will then refer to the Cutting Specification Manual, which has step-by-step instructions on how to prepare the cut. "By using the Guide and Manual together it means that chefs can not only be confident in the consistency of the meat they are ordering, but they will be a part of a scheme that comes with many other benefits for their business." The guide and manual are also available on DVD. All of the cutting specifications are included as individual PDF files.
