Craft Guild gets behind the chef action at Hotelympia

The Craft Guild of Chefs is sponsoring three classes at this year’s Salon Culinaire at Hotelympia, which is considered to be the highlight of the trade show for visiting chefs.

It is sponsoring Main Plates in the junior and senior class in the Salon Display, and the senior class Molecular Gastronomy Skills Test in the Live Theatre.

The junior (chefs under 23) and senior Main Plates, which are in the Restaurant Plate section of the Salon Display, requires competitors to prepare two different, individual main courses, taking account of various cuts of meat, fish, vegetables, offal or game. This takes place in the south hall and the dishes must be prepared hot and displayed cold. The junior class takes place on Monday, April 28, and the senior on Wednesday, April 30.

The Molecular Gastronomy Skills Test senior class is the chance to get creative. The criteria written by Mark Hill, a key member of the Craft Guild’s Culinary Academy, gives competitors the opportunity to show how well they can combine the traditional with ultra modern techniques.

Taking place on Tuesday, April 29, competitors need to produce two main course plates and two dessert plates in 90 minutes with the aid of a double water bath in either or both of the courses, with at least two items from the Sosa or Texturas range.

Dishes will be judged on their creative use of the water baths and products, traditional skills and expertise, with marks also awarded for presentation, taste and composition.

Craft Guild CEO Martin Bates said that around 8,000 chefs visited Hotelympia and the Salon Culinaire. "Made up of the Salon Display, Live Theatre and La Parade des Chefs, the Salon Culinaire is the chance to see established chefs doing some remarkable things, and rising stars being plucked from obscurity after having their talent recognised at this high profile trade show," he commented. "We are delighted to be sponsoring three of the classes at this great event.”

Hotelympia is the UK’s largest foodservice and hospitality exhibition and is considered to be one of the most effective platforms to reach senior buyers from across the industry. It takes place at London’s ExCeL from April 28–May 1.
