Clare said: “With it being my first solo venture and very close to my heart, it wasn’t easy deciding what to call the restaurant, but ‘Core’ seemed right; it’s a seed of something new, with strong ties to nature.”

The food at Core will consist of 10 to 12 evolving dishes on a tasting menu, which guests can order in full of choose three or five courses.

A selection of over 400 wines and champagnes will also be on offer at Smyth’s restaurant and the restaurant will also feature a cocktail bar, seating up to 18 guests, which will offer both alcoholic and non alcoholic cocktails.
