Calling chefs and sommeliers for the Champagne Jacquart Rising Stars Trophy 2011

Now in its fourth year, the renowned Champagne Jacquart's Rising Stars challenge is looking for the finest young chef and sommelier duo in the UK.
Organised by Enotria Winecellars, the competition focuses on the importance of teamwork between the chef and the sommelier. Teams must be aged between 18 and 35, and to enter they have to submit a paper entry detailing a three course menu comprising a starter that includes local produce, a main course that includes sustainably sourced fish/seafood, and a pear dessert. Each dish must also be paired with one of Champagne Jacquart's five cuvées. Eight teams will be selected for the final, which will be held in the competition theatre at the Restaurant Show at Earls Court in London on October 10, where the chefs will prepare and serve their dishes while the sommeliers explain their champagne match to the judges. The winning team will be presented with the Champagne Jacquart Rising Stars trophy and will also win a trip for four to visit Jacquart's landmark headquarters at the Hotel du Brimont in Reims. Key industry leaders will again support the competition. This year David Mulcahy, vice president of the Craft Guild of Chefs, has taken on the role of reviewing the criteria for the competition and will lead the judging team at the final. Past judges have included some of the leading names in the wine trade such as the celebrated sommelier Gérard Basset and Hotel du Vin's Ronan Sayburn. • The deadline for entries is Friday, July 22 2011.
