He now goes through to represent his country at the World Finals being held in Istanbul in autumn 2013.

This year’s Grand Finals, sponsored by Gaggenau and Winterhalter, were held at the MoD’s Worthy Down Catering Services Wing.

Greig Young of The Vineyard, Stockcross came second, while third place went to Michael Cruikshank of Ashdown Park.

The eight finalists, all under the age of 27, and ranging from establishments such as Turnberry Resort, Swinton Park, Lancaster London, the Ritz and Claridges had three hours to create a three-course meal for four people from a mystery box of ingredients.

Hucker’s winning menu was pan-fried seared mackerel fillet, golden beetroot, saffron, cous cous and baby leeks, followed by roast breast of guinea fowl, butternut squash, potato fondant and baby onions and finished off with plum and hazelnut crème brulee tart.

Now in its 35th year, the competition aims to encourage and motivate young chefs, currently working in Chaîne des Rôtisseurs establishments in Great Britain.

The judges were chaired by Daniel Galmiche of the Vineyard at Stockcross, and included Mike Monahan of Carnival UK alongside Cyrille Pannier of the Four Seasons.

Hucker will be awarded a short-term placement with Anton Mosimann and all three finalists will receive a set of Wutshof Knives plus a set of Anolon Pans by Raymond Blanc.

Meanwhile, Loic Avril of The Fat Duck has been crowned 2013 winner of Chaîne des Rôtisseurs’ Young Sommelier of the Year Award.

Avril now goes on to represent the UK and compete on the World stage at the Chaîne des Rôtisseurs’ International Finals in Washington DC in October this year.

Coming a close second was Bouger Romain of the Vineyard at Stockcross and in third place was Avril’s own colleague, Lukasz Jan Kolodziejczyk of The Fat Duck. Both Avril and Kolodziejczyk were mentored by the legendary, Isa Bal.
