Angelo Collaco: Winner of the Ethnic Chef Award

Angelo Collaco from Cafe Spice Namaste, London won the Ethnic Chef Award at this year's annual Craft Guild of Chefs' Awards held on the 16th June.
After gaining extensive experience at the Taj Holiday Village in Goa, India, where he progressed from junior sous chef to head chef, Angelo Collaco joined Cyrus Todiwala's team at Cafe Spice Namaste in 1996.

As head chef, he runs the kitchen with a "calm nature" and has received great praise from both customers and those in the industry who say his "depth of knowledge and ethnic culinary skills are unparalleled".

Not only is he an expert on Indian cookery, specialising in Goan cuisine, but he has trained at the Thai Cookery School at the Oriental in Bangkok and is also skilled in Chinese cuisine.
