Jammy shortbread slice

Makes 12 slices

Use fruit juice or zest of lemon /orange to flavour icing
Decorate by drizzling with melted chocolate

  • 175g butter (room temperature)
  • 125g caster sugar
  • 1 tsp vanilla extract
  • 1 small egg yolk
  • 250g plain flour
  • 150g raspberry jam (or your flavour)
  • 200g icing sugar (decorating)
Preparation method

1. Heat oven to 180c/fan160c/gas4.
2. Line baking sheet with parchment
3. Beat butter with sugar, vanilla extract and then the egg yolk.
4. Fold in the flour gently to form a dough (rest in fridge if really soft for 15 mins)
5. Divide dough in half and roll it out into a rectangle and lay on tray.
6. Spread with jam - but not quite to the edge, leaving a small border
7. Roll out the rest of dough and carefully lay on top of the jam. Crimp seal the edges.
8. Bake for approx 30 mins until golden and set and then leave to cool.
9. Mix icing sugar with a little warm water to make a paste and spread over the top. Leave to set.
10. Cut into slices
