Tilda easy cook basmati and easy cook basmati and wild rice passed with flying colours, with examiners all agreeing the products had an impressive yield, were high quality, easy to cook, delivered consistently good results that looked great and provided a premium quality taste.

New Hellmann’s vinaigrettes

Unilever’s new Hellmann’s vinaigrettes are the latest food products to receive the Craft Guild’s endorsement. Aimed at adding a twist to the salad dressings sector, they have been described as “the perfect alternative to scratch made vinaigrettes”. The five strong range includes: balsamic vinaigrette with acacia honey and ginger; citrus vinaigrette with lemon juice from Murcia; raspberry vinaigrette with blackcurrant juice; and sesame soy vinaigrette with roasted sesame seeds.

The Craft Guild has also endorsed knives produced by Robert Welch Designs. Made from high quality stainless steel, the knives were put through their paces by Craft Guild’s chefs who rated them very highly.

Cheddar, half and reduced fat cheese from the Eat Well Cheese Company, part of Cricketer Farm), have received the Craft Guild of Chefs’ seal of approval, following testing by high-level chefs as part of the Guild’s Product Endorsement Programme.

Results from the tests revealed all three variants to be great tasting, authentic and easy to use products that meet the needs of chefs for cooking.

They were especially full of praise for the added value that the reduced fat cheese provided in healthier recipes, as well as the gratinating and meltability capabilities of the half and reduced fat cheese.

Greg Parsons, managing director of The Eat Well Cheese Company, says: “It is a great honour that the Craft Guild of Chefs has endorsed mature cheddar and half and reduced fat cheese that are three great local Somerset British cheese made from grass fed cow’s milk.

"This also reinforces the fact that half and reduced fat cheese are the ideal ingredients for great tasting healthier recipes."

Bidvest 3663 has achieved Craft Guild of Chefs accreditation on a further 16 own brand products following recent testing. This group of products takes its’s total of Craft Guild endorsed products to 80, helping demonstrate great product quality.

The trend for British fare in the food industry has seen a noticeable rise in the last year and 3663 has capitalised on this in its own brand product development.

Among the 16 products on offer to customers and recently accredited by the Craft Guild are vegetarian dishes such as goat's cheese, sweet chestnut and redcurrant roulade with a red onion compote and for heartier meals its British steak and stout pie and chicken, leek and bacon pie. Among its accredited British desserts are zesty lemon cheesecake, Black Forest fudge cake, white chocolate and fig tart, Black Forest fudge cake and black cherry and marshmallow cheesecake.

All the dishes were rigorously tested in professional kitchens and were scored on quality, cooking instructions and ease of use.

3663 interim own brand and innovation controller Saskia Galema commented: “We’re thrilled that 16 new 3663 own brand products have achieved the Craft Guild of Chefs accreditation bringing the total number of endorsements to 80. This really speaks volumes about the high standard of our own brand to our customers, recognising how 3663 continues to deliver the fantastic quality and innovation that we know is important to them.

In 2012, 3663 claimed an industry first by receiving accreditation for ready-to-serve dishes as opposed to single ingredients, for which Craft Guild accreditation is usually given.

Aviko’s new mini gratins – parsnip and Jerusalem artichoke, and asparagus and parmesan – have been awarded an endorsement from the Craft Guild of Chefs.

Following in the footsteps of the company’s mash, roast potatoes, and cream and cheese gratins, the newly endorsed products offer caterers hassle-free premium sides, which can be served within minutes meaning operators are able to focus on other elements of their menu. Their superior long holding time – in excess of one hour – also makes them perfect for banqueting menus.

Tested by chefs throughout the foodservice sector, the parsnip and Jerusalem artichoke mini gratins made with specially selected potatoes, real cream, emmental cheese, chives, parsley and chervil, and asparagus and parmesan mini gratins made with fresh cream and lemon juice, were found to be “very tasty” with “lots of flavour”. It was also noted that they are “very easy to prepare”.

This proves we’re not only continuing to serve innovative products, but caterers can also be assured that our range also delivers consistently high quality. Kitchens are often under a great deal of pressure during peak meal times so we strive to make menus easier for them.”

Aviko’s mini gratins can be ready in 12 minutes using a convection oven or 20 minutes in a traditional oven, and are ideal when catering for large groups.
