New Hellmann’s vinaigrettes

Unilever’s new Hellmann’s vinaigrettes are the latest food products to receive the Craft Guild’s endorsement. Aimed at adding a twist to the salad dressings sector, they have been described as “the perfect alternative to scratch made vinaigrettes”. The five strong range includes: balsamic vinaigrette with acacia honey and ginger; citrus vinaigrette with lemon juice from Murcia; raspberry vinaigrette with blackcurrant juice; and sesame soy vinaigrette with roasted sesame seeds.

The Craft Guild has also endorsed knives produced by Robert Welch Designs. Made from high quality stainless steel, the knives were put through their paces by Craft Guild’s chefs who rated them very highly.

ICTC's outstanding kitchen tools

Testing was conducted on the Microplane Gourmet Series including the fine, coarse, extra coarse, and ribbon blade, plus the Microplane Premium Classic zester. All products received fantastic reviews from the Craft Guild’s panel of testers.

Comments about the Gourmet coarse included: “this grater performed so much better than any we have used before in our kitchens”, while the Gourmet extra coarse was described as “a good, razor-sharp piece of kitchen equipment”, and the premium zester as a tool that “zests beautifully – just gliding the blade off at the right level with precision”.

The extensive paddle-shaped Gourmet series was enhanced in design and function. It looks sleek and offers an ample grating and shaving surface, soft touch handle, plus non-slip rubber ends for added stability. The Premium Classic series also features the company’s iconic long and narrow rasp-style.

The company says the secret to their performance is the patented Microplane process, which uses chemicals to create sharp cutting surfaces. Globally recognised as the original manufacturer of photo-etched cutting tools, Microplane blades are still manufactured in the US.

Eat Well Cheese Company cheddar, half and reduced fat cheese

Cheddar, half and reduced fat cheese from the Eat Well Cheese Company, part of Cricketer Farm), have received the Craft Guild of Chefs’ seal of approval, following testing by high-level chefs as part of the Guild’s Product Endorsement Programme.

Results from the tests revealed all three variants to be great tasting, authentic and easy to use products that meet the needs of chefs for cooking.

They were especially full of praise for the added value that the reduced fat cheese provided in healthier recipes, as well as the gratinating and meltability capabilities of the half and reduced fat cheese.

Greg Parsons, managing director of The Eat Well Cheese Company, says: “It is a great honour that the Craft Guild of Chefs has endorsed mature cheddar and half and reduced fat cheese that are three great local Somerset British cheese made from grass fed cow’s milk.

The Lynx Purchasing GP Calculator App has become the first digital product to receive the Craft Guild of Chefs’ prestigious endorsement.

The GP App enables chefs, caterers and restaurant managers to monitor margins in busy kitchens or when negotiating with suppliers, using a smartphone or tablet. Craft Guild members working in pubs, restaurants and with catering students, put the App through its paces before the endorsement was awarded.

Developed by buying specialist Lynx Purchasing, the App has already been downloaded more than 7,500 times, and allows users to manage their menu costs using one of three calculations:
• By keying in the cost of ingredients and target percentage GP, users are given the correct price to charge on the menu.
• Entering the menu price and required margin gives the target cost price for ingredients.
• Keying in the cost of ingredients and selling price of a dish gives a read-out of the gross profit being made.

John Pinder, managing director of Lynx Purchasing, said: “The appeal of the App is that it recognises the commercial reality of creating dishes and menus in a busy restaurant, pub or hotel kitchen.

“Most operators work to a target GP, but there are also times when they offer dishes at a set price and need a target cost for the ingredients, or simply need to know what GP they are getting on a special that’s priced to sell.
