Creamy Rice Pudding (v)

For a twist, add some fresh fruit, favourite jam or compote.

As a breakfast dish, warm and fold through some oats.

• 1 litre semi-skimmed milk
• 200g Uncle Ben’s rice
• 60g caster sugar
• 200ml double cream (optional)
• Vanilla extract to taste
• Grated nutmeg for garnish

Preparation method

1. In a suitable non-stick pan, add the rice and milk and bring to the boil.
2. Turn down to simmer for approx 20 minutes, stirring occasionally (until rice is soft).
3. Stir in cream, sugar and vanilla and continue to simmer until the desired texture is achieved (stirring continuously, to prevent sugar from burning).
4. Serve with a sprinkling of grated nutmeg.
