Calzone with Turkey, Chicory, Cheese & Tomato

You can add a whole range of winter vegetables back to this dish. Try adding either pickled or roasted beetroot or sprouting broccoli (blanched)

• 2 x 220g packet pizza base mix
• 200g thick tomato sauce (Dolmio Lasagne sauce)
• 200g chicory
• 250g grated cheese (cheddar and/or mozzarella)
• 40g sun dried tomatoes, drained and chopped (optional)
• 2 tsp chopped oregano
• 300g turkey breast strips (cooked and chopped)

Preparation method

1. Pre heat oven to 200˚C.
2. Prepare pizza mix according to instructions.
3. Roughly chop chicory and mix with cheese, sun dried tomatoes and oregano.
4. Roll out 2 x 12” round pizzas.
5. Evenly spread each base with tomato sauce, 1” from the edge.
6. Place mix in one half 1” from the edge.
7. Evenly distribute the turkey pieces over the mix.
8. Brush water around the edge and fold in half.
9. Place on baking tray, brush with olive oil and bake till golden for 12/15 minutes.
