33-year-old Gavin Kellett was yesterday (28 February) named the new National Chef of Wales, after beating three other finalists for the reigning title.

The Three Horseshoes Inn (Brecon) chef impressed judges with his four-cover, three-course meal, which included a Waldolf Salad to start; glazed fillet of Welsh beef, braised oxtail, oyster and baked potato foam main course; and dessert of chocolate and Penderyn whiskey cheesecake with peanuts, Welsh honeycomb and salted caramel.

Kellett said: “I am very surprised to have won. It has been very hectic over the last three or four days preparing for this, so to have won is up there with the best days of my career.

“I have done well in competitions before, but this is probably the biggest achievement for me.

“I try to do things a bit different with my own twist on classics.

“I wasn’t going to enter any more competitions after this, but I will have to change my mind now.”

Also impressing judges was 2018 Junior Chef of Wales, Arron Tye, who came in second place, followed by Sam Griffiths in third and Matt Ramsdale in fourth – all the Chester Grosvenor employees.

As part of his prize, Kellett will embark on a study tour to the Netherlands with Koppert Cress.
